Marshmallow Eggs

With the boys both in school on Friday mornings and Brian usually gone, I have been spending most Friday mornings with my Grandma. We usually go to breakfast and run some errands together but the Friday before Easter she wanted to make marshmallow eggs together. I enjoy spending time with her and learning some of the skills she has that I don't. This particular recipe comes from her Mom, my Great Grandmother, so it's even extra special to me. These two women are personal heroes of mine and I've always had a special connection and place in my heart for them.

While we worked, we talked about my Grandpa and how this past Christmas was hard without him for many reasons. One of them being his fudge. He taught many of us how to make fudge including myself and unfortunately, no one has mastered it like he had. It just wasn't Christmas without his fudge. When I was at BYU I could count on a package around the beginning of December with a log of his fudge and a bag of mandarin oranges. It was always something I looked forward to...just like how Grandma always sends me a box of pomegranates from their tree in the fall.

It was a fun experience and something I may try and incorporate into my Easter celebrations from now on. A bit messy but that just adds to the fun with my Grandma!!
You fill pans with flour and use plastic eggs to make the egg shaped indentations in the flour! It was a bit tedious setting up and our first batch didn't go as planned to do Grandma answering her cell phone and letting the mixture BOIL when it said 3 times on the recipe, DO NOT BOIL, but the 2nd batch worked perfectly.
Grandma eating one of the marshmallows from the first batch that set up too quickly and didn't form nice egg shapes.
Our marshmallow eggs setting up...you can see which ones were from the 1st and 2nd batches.
I brought some of mine home and dipped them in chocolate later that afternoon. They were yummy and the kids enjoyed them!
