
Yeah so I'd say that's a LOT!! And according to our "garden sitter" she picked a ton of tomatoes too! So it's officially tomato time at our house!!

Of course we had to use some of these while they were right out of the garden and make my favorite dish...

Chicken Tarragon
Basically it's the whole reason for me growing tomatoes! See I actually don't like them unless they are in this dish or some kind of soup, like my favorite Chicken Tortilla Soup! Since it's my favorite meal of the season and the reason my freezer will soon be FILLED with diced tomatoes in ziploc bags, I thought I'd share this quick and SUPER EASY recipe! (Which isn't a recipe at all because I just throw it all in a pan without measurements!!) I'm going to give the recipe for about 4 servings!
10-12 Tomatoes (depending on how much you like them), diced
3-4 Chicken Breasts cut into bite size pieces
Salt and Pepper to taste
2 Tbsp Olive Oil
1-2 Tbsp of Tarragon (fresh or dried)
In a large saute pan, combine all ingredients and cook over medium-high heat until tomatoes have cooked down and chicken is cooked! Usually about 20- 30 minutes. It's smells absolutely HEAVENLY! Serve over rice or pasta (we favor rice with a little butter on it).
There you go! See I told you it was super easy! You'll have to let me know if you end up trying it! I don't think you'll be disappointed!

I dream of having a garden and cooking with my rewards one day. For now, I will just read about yours and listen to my stomach growl...that dish looks fabulous. I'll have to try it.
So glad you are back from you trip. I have been missing you blog posts! Oh all your garden treasures look divine. Someday I'll have a garden, you'll have to give me some tips. I LOVE that recipe! I remember eating it a lot that fateful summer before I started teaching :) We'll have to talk soon!!!

Holy cow! That looks so yummy! It sounds like you guys have been really busy this summer. It sounds like the potty training went well. It's so nice once they are out of diapers! They grow so fast.
