Our garden was still producing until this past weekend when we actually had SNOW on the ground! My sweet Mother-in-law, who was here watching Brayden while I followed Brian to Orlando on a work trip, picked all the rest of the tomatoes (mostly still green) for us and we've been putting them in the windows to gradually turn red! But since the window space is somewhat limited, I've got two big bowls full of green tomatoes sitting on my kitchen counters and a wheelbarrow FULL in the garage!! Needless to say, we're still in the process of trying to figure out what to do with all of these!! I've been making homemade salsa once a week and have also been making spaghetti sauce quite a bit too! Since we LOVE the spaghetti sauce, I thought I'd share the recipe, along with two cute pictures of my little guy enjoying it!
Spaghetti Sauce
2 cans stewed tomatoes, pureed (I've been substituting fresh ones though!)
4 cans (15 oz.) tomato sauce (Again, substituting fresh ones pureed instead)
2 cups water (I only add 1 when using all these fresh ingredients)
2 cans tomato paste
2 Tablespoons minced onions
2 Tablespoons parsley flakes
3 teaspoons salt
1 1/2 teaspoons red pepper flakes
1 teaspoon minced garlic
3 teaspoons sugar
1 1/2 teaspoons Italian seasoning
Mix all the ingredients together and simmer for 2 hours or put it in the crock pot on low and cook it all day. We eat whatever amount we can that night and then let it cool before putting it in quart sized freezer bags (in the amount our little family can eat) and freezing it! We also make meatballs and freeze them too so we can just cook some pasta, grab sauce and meatballs out of the freezer, and have a quick and easy homemade meal!
